Well... a Rube Goldberg solution, with so many intermediate steps the complexity of the edifice would almost be fun in its own right (but displaying my ignorance of the right way to do this), might be: SlimServer ->SoftSqueeze (on Mac) ->(captured by) Nicecast [http://www.rogueamoeba.com/nicecast/] ->(streamed to) wherever. ...or, if you have a Mac with a digital in (like a G5 tower) SlimServer ->actual physical Squeezebox ->(Toslink out to computer Toslink in; captured by) Nicecast ->(streamed to) wherever. Both seriously suboptimal but constructed of available building blocks.
