DVDs are different from CDS. What you want to do it just rip them without any additional encoding or compression. I have all my DVDs ripped whole to a large NAS box.
The two main ways of doing it is to either rip to a ISO disk image or in IFO file mode where the files on the hard drive are the same as the files on the DVD. I went for the file mode. There are -loads- of guides and lots of information on this on other dites compaired to here.
