I've resolved the problem with SqueezeCenter displaying some, but not all album art. Currently it displays all available album art using the %ALBUM - ARTIST.jpg format.
The R.E.M. directory is still having issues, however. Included below is the output from the directory. As far as I can tell, the file names and jpg names match perfectly.
