Of course, it can't be completely freeform -- your custom string has to be composed of valid fields that SC will recognize. But you can choose from any of the data fields and put them in any order, with whatever puctuation you like.
After typing the string, be sure to click the Apply button to save your custom string. After saving it, then you can select it.
