First let me check to see if I understand you correctly. You want to play one source in multiple speaker zones but want to be able to independently control the volume in each zone.
My first thought is that you are looking at a wired solution, of which there are many choices, and are sometimes best installed by a local AV specialist. Wiring in a home already walled in, is of course a challenge but there are lots of tricks to run much of it in wall and hide the rest that can't. Many receivers allow for a 'Zone 2' and sometimes even a third that have independent volume control. You might need to invest in a second remote to save walking around looking for the one. !!However!!, many receivers will not pass digital sources to the extra zones. That means that if your CD or DVD player is plugged into the receiver digitally (fiber, coax or HDMI) as it almost assuredly is, then you will not be able to hear it in the other zones. Seems silly but it's true. You could solve the above problem by using analog outs from your CD player. Depends on how much of an audiophile you are and if you are willing to lose that 'pure' digital signal to your receiver. Another option is buying a cheap stereo receiver/amp for the second zone and running a feed from the main receiver's pre-outs to the second receiver where you would then have separate volume control via the knob or remote. Again, the practicality of this depends on distance and the ability to run more wire.
