It's SATA and can also be purchased as an empty box to populate with your
own hard drives. I have liased with the manufacturer, and they have tested
SlimServer on it and is supported.

I think that is not the best idea (add an HD to an SB2).  The whole idea
is that I don't HAVE to have all of the infrastructure (and costs -
silent PCs are expensive) of a media PC to stream high-quality audio
from SOMEWHERE on the net to my audio system.  Given that my server
solution has about 1TB of disk spinning (250 GB of audio), I doubt that
you could call an SB3 slim.
