Sure, you could install SBS on a fit-PC2 running Ubuntu. 

Alternatively, you also should have no problem installing the Vortexbox
software on it. Just understand that (a) you'll need to temporarily
attach a CD or DVD drive to install the Vortexbox software, and (b) the
Vortexbox will overwrite everything on the hard drive, including the
Ubuntu installation.
