I've seen all the issues listed here too. The latest update (needed for the GFs new shuffle) decided to completely wipe about 8 albums tags; all the artists names began with either A, B, C or D - just makes no sense!
My solution is now to make all the folders and files read-only. We love our iPods and iPad, but I think they're just crippled by iTunes...
