I am sorry that I cannot help you because I am no user of Itunes. In my case there are two ways to get the proper album: 1) an coverart file (for instance folder.jpg or coverart.jpg) in the album directory. 2) embedded (= in the music file itself) coverart.
A good tag editor could store an coverart-file in the musicfile itself (=embedded). I do not known what a good mac alternative is for "mp3tag".
