MusicIP is loaded but not enabled by default. And the iTunes plugin won't do anything unless you have an iTunes library and SBS finds that library in an expected location.
I think the philosophy is to make many of the features offered by plugins available by default rather than requiring new users to figure out how to enable them. It's expected that the built-in plugins are well tested enough to not cause problems with scanning or other server operation. But I'm like you.
