Strangely, I can only get multiple Airplay speakers offered when I use the Remote app to control iTunes. From the Mac itself in iTunes I only see the Apple TV offered for the multiple speakers option. The Airport Express is seen and can be selected as a single destination. In the Audio Devices window, only Airplay is offered as part of a Multi-Output device and not individual Airplay speakers.
