I've used Total Recorder a lot in the past (though I seldom use it now). It has the advantage of capturing the data before the computer sound card (and we all know that most consumer PC sound cards aren't exactly designed with high quality audio in mind) and without doing digital-analog-digital conversions, rather than using the sound card outputs as most other audio capturing software does.
