The simplest thing to do is use the COMPOSER tag and the built-in
Composer menu.   In iPeng I would select the composer, then click on the
cover art, then the track you want to start playback with, then edit the
playlist.  This has one advantage over an organized CD collection: for
example, if you have that one Brahms recording on a mostly Schumann disc
shelved under Schumann, it will show up in the composer submenu for
Brahms if you tagged it properly.

I use some custom tags, Custom Scan, and a Custom Browse menu so I can
select by composer, then work, then a brief description of the
recording.  I can then select from all the recordings of a work that I
have (again, like the example above, they might otherwise be on various
discs shelved in various places).  I wrote my own tagger that populates
dropdown menus with all the composers, works, and artists entered so
far.  Yes, it's a lot of work.  

I'd stick with just the composer menu if you want to keep it simple.   I
keep the composer tag as simple as possible: usually just the last name
of the composer unless disambiguation is needed.  So I have "Bach",
"Bach, CPE", "Bach, WF", "Mozart", "Mozart, Leopold", etc.  No dates or
any other info; that's what google is for.
