AIUI, the point about EAC is in its name. Ripping to FLAC just happens to be one of its features.

And while you (and others) may choose to use Apple lossless, there is a straightforward FLAC ripper for the Mac for those who want it, namely xACT. I haven't tried a direct comparison of xACT coded FLAC files versus iTunes AAC, though.
