Is it still doing the re-scan when you look at the web interface? I had
to disable the automatic rescan's because they made the whole systme
unusable for over an hour when triggered for a largish database derived
from iTunes. 

Are you suing iTunes for ripping? Every time you play a track in iTunes
it updates the iTunes database and can trigger a rescan. My problem
arose becuase my daughter was playing tunes on iTunes and I was trying
to use the SB - it crippled SlimServer.
