maybe, or the permissions aren't right somewhere. Server might see the
xml, but be unable to access the song files. Possible even that it
might not see the xml file.
It begs the reason, of course, of why iTunes imported one song into the
wrong directory...

believe it or not, it usually isn't.
try this from the Terminal application:
/Library/PreferencePanes/SlimServer.prefPane/Contents/server/
slimserver.pl --d_itunes
The console messages will tell show you what the server is trying to do
to get to the itunes info.
I can't suggest much more than that, since I don't use itunes. The log
may give you clues, or you can post it here for advice.
This is still 6.5 right?
