I'm really close to ordering the sb3, I've been watching the product
mature for a long time, and think the time is now to pick one up.

My settings:
maximum streams set to 2000
min bitrate set to 128
max bitrate set to 320
normalize genre on

Problem:
the list of streams is much smaller than what I find on the shoutcast
website itself...

The maximum streams setting defines, how many stations slimserver will get from Shoutcast. All the filtering (genres, bitrates etc) is only done _after_ the download. Shoutcast will deliver a list of the 2000 most popular streams of any genre and bitrate. Slimserver will then remove all those stations that are out of your bitrate range. You'll therefore always end up with less than 2000 streams.

some of the streams I frequently listen to do not
show up in the list.

How many listeners do they count on Shoutcast? Popularity is only measured in the number of listeners - we (slimserver ;-)) can't take any influence. If it's less than let's say 50, chances are it's not popular enough to be in the top 2000. There are so many Pop/Rock stations that even the less popular ones count much more listeners than some other genres.

I can add them as favorites, manually, but I
would like them to show up in the list with the other choices.

While this is simpler for the first time listening experienc, I always end up bookmarking my favourite streams. I then have quick access to 9 of them through a single press of a button.

example, under genre 'Trance', I see 29 streams listed, there is no
next page button or 'more streams' kind of link

but, through the shoutcast website, I find over 75:

If you sort the list by number of listeners ("popularity") you'll see that there are less than 50 streams with more than 50 listeners. Now let's have a look at Rock... there are 100 of them. Pop: about 90.

also, is it possible to sort the stations by their bitrate, like I can
with the shoutcast website?

I'm sorry, no, sorting is possible only by number of listeners or name.
