I had a similar problem that turned out to be a permissions problem. The directory needed to belong to the slimserver account in my particular installation. The issue was write access. I'm running linux (ubuntu) 6.2.1 and the logfile indicated that it could not write the playlist. I can now save, edit and otherwise manipulate the list.
