The default slimverser seems to be 6.2.1, however, many seem to use
6.2.2.

Official release is 6.2.1, and most people should use that wherever possible. If you have an issue with 6.2.1, and it is said to be fixed in 6.2.2, then go for it. if you are happy with a given setup, there is no rush to update 6.2.2 on a daily basis. There are no new features to rush in on, only bugfixes as required.

And since people are working on 6.5 why shouldn't anyone use
6.2.2 then?

6.5 works well enough for many, but it is still experimental. A lot of people are working on it, since there is a lot of work to be done. 6.2.2 is mostly stable, so work can progress using 6.5 passing various fixes back into 6.2.2 where possible. 6.5 may have numerous problems, and may not always work better the next day. You may run into works in progress, and crashes are certainly possible (though everyone tries to avoid having have happen.)
