There's no good fundamental reason Slimserver couldn't do this. The information about the full path name of each song is in the database. I assume the original authors just thought tags were so much better a way to find music than the directory structure, which, for many people, isn't all that well thought out.
The way to go about getting what you want is to file an enhancement request. An enhancement request is actually a bug report with one of the fields (I don't recall which at the moment) selected as "enhancement". Then you describe how you'd like things to work. And if people agree with you, someone will work on it in the future some time and make it so. Do you want to fill out such a request?
