I use the "handheld" skin for my PSP and it works great. The refreshing takes 2-3 seconds after you make a selection (including pause or volume adjustments) but it's still functional.
If you change the display mode on your PSP to "Just Fit" it might help with other skins, but the "handheld" skin works great in my opinion. What I would like to see is someone to design a good icon-based skin for the PSP.
