Anybody have some real world experience as to what it would take?

My old setup was:
Pentium III 500
256mb ram
Linux (mandrake)
2500 mixed mp3/flac

Off this I was running 1 squeezebox1, running softsqueeze on the server and running softsqueeze on a different computer.

This boxed managed to do that quite well, but worked a lot smoother with 512mb (but I ran other server processes on it as well).

Note that running flac to a sb1 needs a conversion from flac to wav, and is a lot mroe cpu intensive and running to sb2. So your server should be fine.
