How are your music folders set up? Looks like you have a directory for Derek and the Dominos. Most people have a directory for 'Derek and the Dominos - Jams', with all songs in that directory. I wouldn't make the structure any more complicated than needed.
Visit http://users.pandora.be/satcp/eac-qs-en.htm to make sure you have EAC set up right. Rip an album. It should make a directory including Artist - Title with the settings above. Use google to find an image (any image!) and copy it to that directory.
