I've never heard of ungrant. To be honest, if you're not comfortable with MySQL already, you may be better off using the supported solution i.e. the sqllite db.
You don't need to specifically create the slimserver user. 'grant all on slimserver.* to slimserver' implicitly creates the user called slimserver.
