OK - I know that slim server converts Ogg Vorbis files before streaming
to the player and I have found the "File types" page in the setup, but
by default it seemed to say that Ogg files had three options to be
converted to AIFF, FLAC or MP3 - so how, without unchecking two of the
boxes, do I tell the server which format to stream Ogg files to the SB?
Initially all three were checked.

On SB2/3 SlimServer will use FLAC, SB1/G WAV, SliMP3 MP3. It's always the "best" format a player supports. If you disabled OGG -> MP3, that wouldn't change for the Squeezeboxen, but SliMP3 would not play any more, as it only supports MP3.
