I noticed that after we rescan our music database, my computer was
losing approx. 5GB of memory. Tracked down a large file called
slimserver.log. It's 10gb. Is this some sort of cache file that I
should be clearing on a regular basis?

It's the log in which slimserver notes what it's doing or if there are any problem. This file usually is very small. Please check that you don't run slimserver with debug flags (-d_* parameters or Server Settings/Debugging) turned on. Especially scanning can generate tons of messages if eg. d_info is active.

If so, how do I clear it, or can it just be deleted?

Just delete it. You might have to shut down slimserver to do so.
