To be honest I think you might be trying to push the box a little bit too hard by playing FLAC files and copying files to the box at the same time. Obviously the box is more than capable of being read and written to by multiple users at the same time. I personally have had 6 Squeezeboxes playing different music files at once (mixture of wired and wireless Squeezeboxes too). Some files were MP3 and some were FLAC.
I personally think 7Mb/sec is quite decent on a 100Mbit network connection as the maximum throughput on this connection is 12.5Mb and taking into account other network traffic that may also be going around at the same time it isn't too shabby.
