Another vote here for Ubuntu. Some more experienced hands are put off that the standard distribution doesn't include the standard development tools you need to build from source (make, gcc, etc.), but the "apt-get" utility is so good that it's very easy to download and install what you need. Also, if you only want to run server applications, like slimserver, there is a version of Ubuntu that is optimized for being a server.
