I'm using an 'Icy Box' drive enclosure (a google should find it). It's rather cheap and cheerful but does it's job well. The drive is formatted ext3 as one partition - I needed to connect the drive via ide to format it, as formatting to non-windows types didn't seem to work whilst within the enclosure.
I run rsync to synchronise all personal and media files every night. The enclosure is easy to grap in an emergency - if I've got that everything else can burn!
