Do you run slimserver as root? Root may not use the same settings as a regular user. Did you try to run the date command as the same user that runs slimserver? I think this problem has come up before. If I remember correctly it had something to do with perl not picking up date/time system settings at startup. Does slimserver use the correct settings when you start it manually?
