Here is what you are supposed to do, although it is very poorly documented (I only found out about it because I contacted tech support with a config file related problem).
Place any custom file types in a file called custom-types.conf Place any custom conversion recipes in a file called slimserver-convert.conf (it seems like it would be custom-convert.conf for naming consistency, but it isn't).
