I think there was a separate convert.conf file in 6.3 and below, but with 6.5 it has been rolled into the preference pane itself. If you control-click on the SlimServer preference pane in the Library folder, you can Show Package Contents. Inside the contents is a folder named server and convert.conf is in there, as is types.conf.
This implies that one should not change the file convert.conf, though one may want to read it. I'm not sure, but I suspect that if you want to change something, this is best done by creating your own custom-convert.conf and putting it in the SlimDevices folder. By the way, Spotlight tends not to show you system files - I'm not sure exactly which it shows and which it doesn't.
