I also use mac and I have two firewire drives in the loop for music. I don't use itunes but I have in the past. If you only plan on using the one external drive for music then I'd suggest changing your itunes music folder. You can easily do that by going into itunes preferences and stepping into the advanced options.
if you plan on using both drives then I'd suggest changing your itunes preference for how the music files get treated when you add music to your library. you can set it so that when you add music from your external drivesto the itunes library the files don't get moved into your itunes folder, they stay on that external drive. in order for slimserver to read multiple drives: you need to create a symbolic link to the music folder on the external drive. i can't remember the details but I believe I had to download a small symbolic link utility program. then once it's installed you can control click on a folder and get the option of creating a symbolic link for that folder.
