Oh, thanks for the tip! I poked around a little, and found the problem: ownership of /etc/slimserver.conf was root:root instead of slimserver:slimserver for some reason.
However, I think that the behavior of SlimServer was inadequate in this case: - it allowed changed when it knew the changes couldn't be saved, - it logged zero error/warning about failing to write conf file.
