Because iTunes changed where they hide the album art and I'm not sure if anyone has fully figured out where it moved to. If you store your albums in a "folder per album" (ie, something like: E:\Music\Artist\GreatestHits would be "Greatest Hits" by Artist, then just save the cover are in that folder as "cover.jpg" and you are done.
