here are a couple commands you can run in the shell/terminal:
# rename anything.jpeg to cover.jpg
find ${music} \( -type f -name "*.jpeg" \) -print -execdir mv -f "{}"
cover.jpg \;
# rename anything.jpg OTHER THAN cover.jpg to cover.jpg
find ${music} \( -type f -name "*.jpg" \! -name "cover.jpg" \) -print
-execdir mv -f "{}" cover.jpg \;
Replace ${music} with the path to your music library
