The web interface is certainly the easiest way to adjust the Server Settings IMHO, but there is also a Settings menu on the Squeezebox which allows you to access a lot of the main settings.
If you have not adjusted the menu configuration, it will be one of the options in the top level of the SB menu, near the Plugins menu.
