A couple of points. 1. If network traffic is between a PC app and 127.0.0.1 or the server IP address and the App is on the same PC - it will not show up with Ethereal. Slimserver uses AJAX a lot with Web interface and it doesn't show.
2. If you are using task manager to see what is happening - I think it is "blind" in some areas. I found ProcessExplorere to be better especially as using the mouse on the graphs can show you the process responsible for the peak. ProcessExplorer can be got from here http://www.microsoft.com/technet/sysinternals/processesandthreads/processexplorer.mspx After starting - open the system info by clicking on the 3 small graphs on top right. Run GMail and Slimserver and see if any of the graphs rise or counters increment significantly.
