Goto EAC options > Filename tab
for 'Naming scheme':  
%A \%C \%N - %T
for 'Various artist', tick the box and enter:      
%C \%N - %A - %T

This creates a Folder per Artist inside which it creates a folder per
CD.

Then on the Directories tab, browse to where you want the folders
created.
