Depends on the firmware you're using currently. SC7 ships with firmware 86 for SB2/3, and 40 for Transporter.
It is indeed simple to run more than one SqueezeCenter server on a single network, just install as usual. Then go to the player(s) you'd like to connect to the new server, hold the left arrow for 5 seconds and scroll down until you see the new server (computer name).
