Ok, I got SoftSqueeze up and running. For some reason, when I hovered over it in my tray, it said it was stopped and the option to start it was greyed out. I had to restart my computer; didn't know how to fix it.
Now, I have a new question. In SoftSqueeze, I clicked the 4th button the top right to bring up the WebInterface. The address is 127.0.0.1:9001. It won't connect (as I suspected). Do I need to forward that port in my putty tunnel config to get it to work? Right now, I have to have a forward the UltraVNC port, so I suspect this might be the case. The reason, I would rather have the web interface than the player interface.. I just want it to all be tunneled through SSH!
