For Linux users, I've found MP3FS to be a very elegant solution to this problem. You point MP3FS at a directory full of FLACs, and it creates a virtual directory full of MP3s. Only the MP3s don't exist anywhere on a disk, but are transcoded on-the-fly from the FLACs.
