FWIW, we use the following Git installation instructions for OpenHatch's Open Source Comes to Campus events (https://openhatch.org/wiki/Open_Source_Comes_to_Campus/Curriculum/Laptop_setup/OSX_git) and we don't seem to face the same configuration issues. It does need to be updated for Mavericks 10.9 and Yosemite 10.10.
