Gamers create a lot of interesting hardware and software that can be leveraged for capturing multiple screens/windows/cameras. We've been using this approach for over a year now and recently were pretty impressed with Open Broadcaster Software (https://obsproject.com/) for stitching different inputs together and capturing them.
