You can do a bash Jupyter notebook. Not completely trivial to set up so I would not be getting attendees to do it, but it works identically to the python notebook. The cells are a bash shell so you can do all the bash and git just like it was in a terminal. Also works for R although in the real world I find myself doing python notebooks with R magic, ! prefaced bash calls and %%writefile as a text editor. This could however be very confusing to novices.
