Hi Eric, for intermediate students (that are familiar with whoami, ls, cd, cp, mv, rm) using dotfiles as an introduction to Git should be great. But for novice students I would stay with a .txt file because it will save time to explain dotfiles concepts and avoid students problems with .bashrc.
