How hard is it, assuming one has Kurzweil 7 to synthesize mp3's out of books, to make daisy out of them?

The recorded part of Daisy books are simply mp3 files. So you will not make an audio book any smaller by reformatting it into Daisy, you will make it easier to read and navigate assuming you have a daisy playback device.

On a Mac the only way I know of to produce Daisy books is to use my dtbmaker software, which is free and can be downloaded at http://w3.wmcnet.org/dtbmaker I'm sorry to report that getting dtbmaker installed and working is not a very simple process and requires a some background in the perl programing language. Because of this I have developed dtbmaker online https://home/wmcnet.org/services/dtbmaker/ which will turn text files into Daisy books and then email the link to pick them up. This helps if you have an original text file you want recorded.
