Go into preferences, click accounts, highlight the one you want, then click remove account. This removes the account. However, for some reason, this does not either remove the server, or prompt you if you'd like to remove the server it uses. To do this, you need to add a new account. When it gets to the server used for the account, there is an edit servers button. Click that, then you can select the server you want from the table, then click remove. Then simply exit w/o saving. There's probably another way to get the server list, but this is the only way I've run across to remove servers. There's probably some way to edit the servers w/o adding a new account, but if there is, I've not found it. Mostly because I've only ever needed to change my server settings once, and that was while adding a new account. *grin*
