Hi Ruth,
Good to have you on the list!
There are many, but a good place to ggo for a start is:
http://www.apple.com/accessibility.
It's got a pretty good getting started manual and an interactive
tutorial that can be run on the Mac providing instruction on various
commands.

We have a number of Windows-literate computer users lined up to try out
the Mac and VoiceOver and report back on how they get on. We also have a
set of tasks for them to do, using text, wp and pdf documents, email and
web.
What we need now is some basic instruction in the use of the Mac,
starting with where the Command, Control and Alt keys are, how to
control VoiceOver and a few basic configuration options (speed, pitch
etc), moving on to how to open and close applications and navigate
around the interface. Ideally we also want four short tutorials on how
best to use TextEdit, Preview, Mail and Safari with VoiceOver, and
interact with content (documents, messages and attachments, web pages).
Hints and tips about things like pros and cons of linking the mouse
focus with the VO focus, grouping text in web pages, and VO clicking and
mouse clicking would be handy but not essential.
Sounds quite a lot, but knowing who's on this list I wouldn't be
surprised if it's already available somewhere, and if not, someone might
like to put something together for us? We already have the full list of
keystrokes, but that's not enough for this exercise.
Thanks
