I haven't used these services, but the MacFixIt site that I check for 
problems and solutions connected with updates recently listed that
they would start a section in their user forums for technical support
and information for SubRosaSoft's data recovery tools.  This company
has a product called FileSalvage that recovers deleted files on Macs
running OS X 10.3 and above.  The web site for the product is:

They are supposed to have a free demonstration trial download, and 
the software costs $89.95 to purchase the CD (or $10 less if you 
get the software via download).

I'm not sure whether the MacFixIt forums are restricted to subscribers,
but here is the link that they gave on March 1 for the new SubRosaSoft

You could also try the subrosasoft.com web site for the product.

A couple of other services I saw mentioned elsewhere:

1. Stellar Information Systems.  The poster of this information said,
"There's a demo you can try, but the full version is priced a bit 
steeply at $300 (this may not be so steep considering people lose
data that is invaluable to them).
